Here’s a good idea for a quick meal when the temperatures start to cool down. Quick chicken soup made from a rotisserie chicken.
Here is what you will need.
One rotisserie chicken
Two cans of chicken broth
One can of beans
One can of okra and tomatoes with corn
Four small potatoes, peeled and cut in small pieces
One celery stalk, chopped
One package of Lipton onion soup
garlic powder
Black pepper
1 1/2 cup Water
Debone chicken and place in large stock pot. Add one packet of onion soup mix, chicken broth, beans, okra and tomatoes with corn, potatoes, celery, garlic powder and black pepper to taste. Stir the ingredients together. Bring to a boil. Add water and simmer until potatoes are soft.
I served the soup on our first cold night of the year. We had miniature cornbread muffins while watching Monday night football.

It is funny that people eat more ice cream during winter months. 🍦When I was a grocery cashier in my teens, I noticed that a lot of customers would run in the grocery store late at night on cold nights to get ice cream.
We are having record low temperatures this week. We have not turned the heat on yet. It feels way too early to be heating the house in October!
Here in Louisiana, we usually turn the heat on and then have the air conditioner back on in no time. Back and forth for weeks and sometimes months. 🙃
